Wake & Bake is finally live and the first recipe is… Migas!
Spanish for crumbs, Migas is a mix of an assortment of different foods that, when combined all together, make a tasty meal. It’s easy to make and a fantastic way to repurpose leftovers. Sound like something you wanna try? Check out the recipe below to make your own!
Migas
Makes 2 servings
Ingredients
3 Tbsp., olive oil
¼ cup onion, chopped
¼ cup red bell peppers, sliced
½ take-out burrito or 2 leftover crunchy tacos, chopped
3 cups, thick corn tortilla chips, free from the restaurant
1 clove garlic, minced
3 large eggs, beaten
½ cup green salsa
¼ cup pico de gallo
Salt & Pepper, to taste
½ cup Mexican cheese blend, shredded
Cilantro, chopped fine
Sour cream
Directions
- In a large fry pan, heat the olive oil on medium-high heat. Add the onions and peppers and sauté until softened, about 3 minutes. Add the tortilla chip, leftovers, garlic, and salt & pepper to taste. Cook until heated through.
- Add the eggs and green salsa. Cook until eggs are cooked through and the chips have softened.
- Sprinkle cheese over the top, turn off heat and cover. Wait for cheese to melt before serving. Top with cilantro, dollop of sour cream, and pico de gallo.
