Double Chocolate Chip Pancakes with Peanut Butter Whipped Cream & Snickers Syrup
Makes about 1 dozen pancakes
Ingredients
For Pancakes
1 ¼ cups all-purpose flour
¼ cup cocoa powder
5 Tbsp. granulated sugar
1 1/4 tsp. baking powder
½ tsp. salt
¼ tsp. baking soda
2 large eggs
2 Tbsp. melted butter
3/4 cup whole milk
1/3 cup semi-sweet chocolate chips
Non-stick cooking spray (optional)
For Peanut Butter Whipped Cream
1 cup heavy whipping cream
2 Tbsp. creamy peanut butter
2 Tbsp. powdered sugar
1 tsp. vanilla extract
For Snickers Syrup
1/4 cup whole milk
2 Snickers bar, chopped
Directions
For Pancakes
- In a large bowl, combine flour, cocoa, sugar, baking powder, salt and baking soda. Whisk to combine. In a medium bowl, whisk the eggs, melted butter and milk. Pour the wet ingredients into the dry and stir to combine. Fold in the chocolate chips. The batter will be slightly lumpy.
- Cook the pancakes on a non-stick skillet over medium-high heat. You can also use non-stick spray. Pour 1/3 cup of batter onto pan. When bubbles begin to rise the top of the pancakes and edges look cake-y, about 2 minutes, flip them over and continue to cook for another minute or two. Remove cooked pancakes to a plate.
For the Peanut Butter Whipped Cream
- Pour the chilled whipping cream into a chilled bowl. Whip the cream with a hand blender until it is very frothy. Add the peanut butter, powdered sugar and vanilla. Continue whipping until the cream forms stiff peeks. Set aside and keep cold.
For Snickers Syrup
- In a small sauce pot, bring milk to a simmer. Add chopped Snickers bar and stir for 3 – 4 minutes until smooth and mixture begins to bubble and thicken. Remove from heat and allow the sauce to cool slightly.
